One Sauce… So Many Ways {Veri Peri sauce review & giveaway}

 

Raise your hand if you’re a sauce girl! I DEFINITELY am!! I LOVE sauces of all kinds! When I marinate meat, I usually like to add more sauce to my own once I eat it. When I eat a burger, my fingers are ALWAYS sticky by the end because  I add so much sauce… I usually need 2 or 3 napkins… Man… I LOVE me some sauce! I love to try new stuff too! The mildest is the Lemon & Herb, followed by the Garlic, then Mild, then Hot, then Veri Hot. I decided to choose the first three to try out…. I must confess I’m kind of a wimp when it comes to spicy stuff… (I used to only be able to eat mild stuff, but surprisingly after pregnancy, now I can sometimes do medium)… I know… still a light foot! I was super excited to get cooking when my bottles arrived! I Love how versatile this sauce is. It can be used for so many things. The ways I came up with included: Just an excellent marinade for baked chicken. I used the Lemon & Herb by itself because I really wanted the flavors to stand out. It was SOO good! No heat, but with a great fresh lemon taste and with plenty of interest from the herbs! Probably my fav!

I used the Garlic to toss with some potatoes that were then roasted. I also tossed some olive oil with it to mellow the heat… Yes, to me it was  a bit spicy. There is a spice index on the bottle that listed it as a 3/10.( The Lemon & Herb had a 1.) Not too spicy, but with a good kick and plenty of garlic-y goodness! (I LOVE garlic!) The Mild was next, and I must say I haven’t been brave enough to actually cook with  it yet. I tried some before cooking with it, as I do with all sauces I use, and I have to say it really woke my tongue up! :-) Like I said before, I do have tender taste buds, so I wasn’t too surprised, especially considering it has a 5/10 index. Maybe I will get brave and crock pot some chicken for tacos, or it would also go great with a (splash) added to a black bean and corn dish. For all you spice lovers out there, I think this would be a great one to try first. It will definitely let you know it’s got some heat! I can only imagine the other two!! :-)

Something I really like about these sauces is how creamy they are. They are also thick enough that they could stand up to being poured directly on as a condiment. The sky is the limit to what you can do with these sauces. I also love that they are super healthy, so they are a perfect addition to your pantry if you are health conscious and are always looking for a new way to do (chicken!) I personally think they give baked, grilled.. you name it meats that something special to turn ordinary into extraordinary! These sauces are definitely REAL Mom Recommended! Thanks Veri Peri!

Yummeeee!! {Food Network Magazine Cookbook Review and Giveaway}

My tummy is rumbling as I write and think about the mouth watering recipes and pictures that Food Network Magazine has collected in its new cookbook:  Food Network Magazine 1,000 Easy Recipes Super Fun Food for Every Day, releasing today March 20th!  Being a busy mom, I’m a huge fan of simple recipes that are quick to make, and this cookbook delivers just that!  All of the recipes are practically only a paragraph long!!…….if you have time to send a text, you have time to find a great recipe in this book.  Though I’m giving FNM 1,000 Easy Recipes: Super Fun Food for Every Day to my godson, who is a budding chef, as a gift, it didn’t stop me from sneaking a peek…….well, okay, more like an extensive glance (don’t worry, I was careful not to break the binding :) )

Food Network Magazine has made it easy for us all, to change up “the usual” food we cook.  Inside 1,000 Easy Recipes: Super Fun Food for Every Day, you’ll find out how to make crostini in around 60 combinations, burgers in 54 new variations and more than 100 soup and salad choices.  As I started looking through this book, I realized I just had to write down a few recipes.  The problem is that my list became so long, I decided I’ll have to purchase my own copy.  I particularly liked the tea sandwich and cold drink sections.  Another favorite part, was the beginning of the book, where it gives you a nice collection of suggested menus…..like Southern Picnic, Afternoon Tea and Book Club Snacks.  Entertaining is a blast for me, and when we finally build our new home, I’m going to bring out these secret weapons.  Throughout the book you’ll find tips to make your cooking experience more enjoyable along with plenty of vivid photographs.

I hope my godson will enjoy this book as much as I have.  These recipe ideas will surely inspire him and will be perfect for him to take along to college in a few years.  Maybe when I go to visit, he’ll surprise me with a meal!!  Creating new twists on old stand by recipes, in minutes, is REAL MOM RECOMMENDED!

A Time Saving Chicken Dish! {Hellmann’s Chicken Change-Up}

I love to cook, the only problem is that I have three little kids and a very busy schedule between watching them and working.  So many times I just don’t have time to cook.  I love it when I find a recipe that makes dinner time easier.

Here’s a dish I tried out last night, boy did we love it!  First off it’s simple & easy, and secondly it’s delish! You MUST try it out.  {Please don’t mind my little guy talking during my filming. LOL, you know how kids are!?!}

 
Preparation:

After it came out of the oven:

BBQ-CHEDDAR-CRUSTED CHICKEN

A simple and juicy solution for dinner

4 servings

Prep Time: 10 minutes     Cook Time: 20 minutes

INGREDIENTS
  • 1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise
  • 1/4 cup shredded cheddar cheese (about 1 oz.)
  • 2 Tbsp. barbecue sauce
  • 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
  • 4 tsp. Italian seasoned dry bread crumbs
INSTRUCTIONS
  1. Preheat oven to 425°.
  2. Combine Hellmann’s® or Best Foods® Real Mayonnaise, cheese and barbecue sauce in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
  3. Bake 20 minutes or until chicken is thoroughly cooked.

Clorox Clean-Up Recipes For Fun! {Edible Playdough Recipe}

Do you remember all the fun things that you did as a kid?  Oh, the memories I can recall.  Playing all day long-til it was too dark to see, running through the neighborhood park and playing on the swings, riding bicycles to the country store to pick up a candy bar and pop.  Oh, Sweet Sweet Memories.  I love reminising about those days. Homemade Edible Playdough

Ingredients needed:

  • 2 cups Powdered Milk
  • 2 cups Honey
  • 2 cups Peanut Butter

Directions:

Mix the three ingredients together in a bowl and roll into balls. Then let the kids have at it.  They can enjoy playing, then eat it. What fun!

A Chocolate Love Affair: 5 Chocolate Cakes for Valentine’s Day

When you hear the word chocolate, do you become overwhelmed with feelings of warmth, passion, intense cravings and excitement? If so, you might be a chocoholic. Rather than remain in denial, it’s about time you fessed up to your love of the cocoa bean. This Valentine’s Day, embrace your infatuation for chocolate desserts and delight your lover at the same time by making one of these irresistible chocolate cakes.

The following cake recipes can also be paired with other great gifts, including a beautiful bouquet of Valentine’s Day flowers, a personalized gift, elegant jewelry or a gift certificate from a luxury salon or spa. Give as little or as much as you wish to your sweetie—just make sure you give it with all your heart. V-Day is a special time to acknowledge those you love, so make it count this year with these delicious chocolate desserts.

1) Fudgy Chocolate Layer Cake

Servings: 18

Ingredients

1 pkg. (8 squares) semi-sweet baking chocolate, divided

1 pkg. (2-layer size) chocolate cake mix

1 pkg. (3.9 oz.) chocolate pudding

4 eggs

1 cup sour cream

1/2 cup oil

1/2 cup water

1 tub (8 oz.) whipped topping (Do not thaw.)

2 Tbsp. sliced almonds

Directions

Heat oven to 350°F.

Chop 2 chocolate squares. Beat cake mix, dry pudding mix, eggs, sour cream, oil and water in large bowl with mixer until well blended. Stir in chopped chocolate. Pour into 2 (9-inch) round pans sprayed with cooking spray.

Bake 30 to 35 minutes or until toothpick inserted in centers comes out clean. Cool in pans 10 minutes. Loosen cakes from sides of pans. Invert onto wire racks; gently remove pans. Cool cakes completely.

Microwave whipped topping and remaining chocolate squares in microwaveable bowl on high 1-1/2 minutes or until chocolate is completely melted and mixture is well blended, stirring after 1 minute. Let stand 15 minutes to thicken.

Stack cake layers on plate, filling and frosting with whipped topping mixture. Sprinkle with nuts. Keep refrigerated.

Tip for Baking Chocolate Cakes

While a fudge cake is fabulously fattening, you can also make a low-fat version of this recipe that’s just as tasty by using fat-free chocolate pudding, reduced-fat sour cream and light whipped topping.

2) Chocolate-Smothered Oreo Cake

Servings: 16

Ingredients

1 pkg. (2-layer size) devil’s food cake mix

4 squares semi-sweet baking chocolate

1/4 cup butter

1 pkg. (8 oz.) cream cheese, softened

1/2 cup sugar

2 cups thawed whipped topping

12 Oreo cookies, coarsely crushed

Directions

Heat oven to 350ºF.

Prepare cake batter and bake in 2 (9-inch) round pans as directed on package. Cool cakes in pans 10 minutes. Invert onto wire racks; gently remove pans. Cool cakes completely.

Microwave chocolate and butter in small microwaveable bowl on high 2 minutes or until butter is melted. Stir until chocolate is completely melted. Cool 5 minutes. Meanwhile, beat cream cheese and sugar in large bowl with mixer until blended. Gently stir in whipped topping and crushed cookies.

Place 1 cake layer on plate, spread with cream cheese mixture. Top with remaining cake layer. Spread top with chocolate glaze; let stand 10 minutes or until firm. Keep refrigerated.

Tip for Baking Chocolate Cakes

If your sweetheart is staying true to his or her resolve to lose weight, divide the cake into smaller slices beforehand to keep temptation at bay. As long as the portions are controlled, an occasional splurge is okay (and even advised).

3) Triple-the-Chocolate Cake

Servings: 18

Ingredients

1 pkg. (2-layer size) chocolate cake mix

1 cup sour cream

1 pkg. (3.9 oz.) chocolate pudding

4 eggs

1/2 cup oil

1/2 cup water

3 cups thawed whipped topping, divided

1 pkg. (8 squares) semi-sweet baking chocolate

1-1/2 cups fresh raspberries

Directions

Heat oven to 350ºF.

Beat all ingredients except whipped topping, chocolate squares and berries in large bowl with mixer until well blended. Pour into 12-cup fluted tube pan or 10-inch tube pan sprayed with cooking spray.

Bake 50 minutes to 1 hour or until toothpick inserted near center comes out clean. Cool cake in pan 10 minutes. Loosen cake from sides of pan; invert onto wire rack. Gently remove pan. Cool cake completely. Transfer to plate.

Reserve 2 Tbsp. whipped topping. Microwave remaining whipped topping and chocolate squares in microwaveable bowl on high 1-1/2 to 2 minutes or until chocolate is completely melted and mixture is well blended, stirring after each minute. Drizzle over cake. Immediately drop scant teaspoonfuls of the reserved whipped topping around top of cake; draw toothpick through center of each to resemble star. Fill center of cake with berries. Keep refrigerated.

Tip for Baking Chocolate Cakes

When baking a cake, the cake pan should never be more than 3/4 full to allow enough room for rising. Begin testing the cake for doneness eight minutes before the timer goes off.

4) Chocolate Molten Cake with Peanut Butter

Servings: 10

Ingredients

4 squares semi-sweet baking chocolate

1/2 cup butter

1 cup powdered sugar

2 whole eggs

2 egg yolks

6 Tbsp. flour

4 oz. (1/2 of 8-oz. pkg.) cream cheese, softened

3 Tbsp. creamy peanut butter

2 Tbsp. brown sugar

1/4 tsp. vanilla

1/2 cup thawed whipped topping

Directions

Heat oven to 425°F.

Microwave chocolate and butter in large microwaveable bowl on high 1 to 1-1/2 minutes or until chocolate is almost melted. Stir with whisk until chocolate is completely melted. Stir in powdered sugar. Blend in whole eggs and egg yolks. Stir in flour; set aside. Mix cream cheese, peanut butter, brown sugar and vanilla until well blended.

Pour half the chocolate batter into 1-qt. souffle dish sprayed with cooking spray; cover with layers of cream cheese mixture and remaining chocolate batter.

Bake 20 minutes or until edge is set but center is still slightly soft. Cool slightly. Serve topped with whipped topping.

Tip for Baking Chocolate Cakes

For a little variation to this cake recipe, use custard cups instead of a souffle dish and layer batters as directed. Then, put the cups on a baking sheet and bake at 425°F for approximately 13–14 minutes. (The edges of custard cups should be set while centers are somewhat soft.) Makes 7 servings.

5) Rich Mahogany Sour Cream Cake

Ingredients

3 squares unsweetened baking chocolate

1/2 cup water

1 container (8 oz.) sour cream

1-3/4 cups cake flour

1-1/2 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

2/3 cup butter, softened

1 cup granulated sugar

2/3 cup firmly packed brown sugar

3 eggs

2 tsp. vanilla

Chocolate frosting

Directions

Preheat oven to 350°F. Grease and flour 2 (9-inch) round cake pans. Cover bottoms of pans with wax paper. Grease and flour wax paper; set aside. Microwave chocolate and water in medium microwaveable bowl on high 1 to 2 minutes or until chocolate is almost melted, stirring after each minute. Stir until chocolate is completely melted; cool completely. Stir in sour cream.

Mix flour, baking powder, baking soda and salt; set aside. Beat butter and sugars in large bowl with electric mixer on medium speed until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Add flour mixture alternately with the chocolate mixture, beating after each addition until well blended. Add vanilla; mix well. Pour evenly into prepared pans.

Bake 35 to 40 minutes or until toothpick inserted in centers comes out clean. Cool cakes in pans 10 minutes; remove from pans. Cool completely on wire racks. Fill and frost with chocolate frosting.

Tip for Baking Chocolate Cakes

Want to enhance the taste of your chocolate cake even more? Add a half-cup of freshly brewed gourmet coffee to the recipe to intensify the chocolate flavoring. If your Valentine is a coffee lover, serve this dessert with a fresh cup of Joe also.

J-E-L-L-O this holiday season!

We all love it!  JELLO!  I remember my mom making it all the time as a kid, especially around the holidays.  This year I will be making this fun Jello Recipe for my little kiddos and family:

Mini JELL-O Trifle Bites

What You Need

2 cups boiling water
2 pkg.  (0.3 oz. each) JELL-O Raspberry Flavor Sugar Free Gelatin
3 slices prepared fat-free pound cake (3/4 inch thick), cut into 24 cubes
1 pkg.  (8 oz. ) PHILADELPHIA Neufchatel Cheese, softened
1 cup powdered sugar
1 cup  thawed COOL WHIP LITE Whipped Topping
1 tsp. lemon zest

Make It

ADD boiling water to gelatin mixes in large bowl; stir 2 min. until completely dissolved. Place 1 cake cube in each of 24 mini muffin cups lined with foil liners; cover with gelatin. Refrigerate 2 hours or until firm.

BEAT Neufchatel in small bowl with mixer until creamy. Gradually beat in sugar. Gently stir in COOL WHIP and zest.

SPOON into pastry bag fitted with star tip. Use to pipe Neufchatel mixture over trifles.
