I didn’t have to turn further than Chapter One on “Soups” to find the recipe I wanted to try first; Mexican Minestrone Soup with Cornbread Dumplings. With a good variety of veggies, and chicken I substituted in, this soup is a wholesome, filling meal. Crock pots are genius. Just place ingredients into the pot in the morning, and come home 6-8 hours later to a perfectly simmered dinner ready to eat. Crock pot meals are also usually quite affordable, using inexpensive cuts of meat. As author Donna-Marie Pye mentions in her book, slow cooking is beneficial to tough meat, like shoulder and rump areas, because it breaks down collagen in connective tissue of the muscles, leaving meats moist and tender. I have made many a roast in this amazing appliance and each time it is cooked to perfection.
There is some prep work often involved in making a crock pot meal. For the Mexican Minestrone Soup I made, I sautéd onions & garlic and chopped some veggies, but it was easy. I dumped the rest of the ingredients in and let the pot do its magic. I stirred the dumpling ingredients together and added it to my soup 20 minutes before completion. Very little effort on my part, as compared to making a full meal when I’m tired at the end of a long day. I think I’ll start keeping cut veggies in containers ready to grab for a convenient meal in the crock pot.
One neat thing I discovered from reading Easy Everyday Slow Cooker Recipes is that although the crock pot is great for cooking roasts and soups, it can also cook desserts!
